Freekeh Chicken Soup

Chicken broth:
2 Chicken breast boiled in your favorite spices and shredded - I use salt, black pepper, cardamom and little cinnamon. 
Add enough water to make a pot of soup enough for four people or more for leftovers. 
You may use chicken broth cubes or paste if you like it’s flavor. 
1/2 to 2/3 cup freekeh , cleaned and washed. Soak in hot water for half an hour or so. 
One or two pieces of the following vegetables : Diced carrots, celery and onions . You may use any vegetables of your choice. 


Directions:
In a pot, add cooking oil and sauté your freekeh for few minutes until it starts to steam. 
Add the chicken broth on top of the freekeh , it should be enough to cover at least half of the pot.
Boil on high heat first then lower the heat to simmer, it may take up to one hour for the freekeh to cook fully. Taste and adjust your spices to your liking. 
20 minutes before you turn off the heat, add your vegetables and cook until the vegetables are soft but still keeping their shape.  You may sauté your vegetables in oil before adding them to the soup pot.
