Ramadan 2015 - رمضان ٢٠١٥

العالم الاسلامي في الايام القليله المقبله بشهر رمضان المبارك اعاده الله علينا و عليكم بالخير و السلام، و اثابنا الله على حسن اعمالنا خير الثواب
شهر رمضان الكريم مرتبط ارتباط تلقائي بالطعام و تحضير الوصفات الرمضانيه التقليديه على مائدة الافطار. و بمناسبه الشهر الفضيل، و ككل رمضان مضى منذ إنشاء هذه المدونه، جمعت وصفاتي المنشوره مسبقا في موضوع شامل حتى يسهل البحث عن وصفات منوعه و تقليديه تناسب جميع الاذواق و تساعد القراء في تحضير اطباق سهله و منوعه و جديده.   
 شهر رمضان هذا العام يصادف في اوائل فصل الصيف , في حوالي الثامن عشر  من حزيران،يونيو، حتى حوالي الثامن عشر من شهر تموز -يوليو اعاننا الله على صيامه و قيامه. 
 برغم حرارة الصيف، الشوربه من الاطباق المرغوبه في رمضان و هنا وصفات الشوربه  كطبق اول لوجبة الافطار
شوربة العدس : هي شوربة نباتية تحضر من العدس المجروش البرتقالي اللون. يمكنكم إضافة أي أنواع من الخضار والبهارات حسب الذوق الشخص
 شوربة البندورة: تتكون من عصير البندورة والشعريه الرفيعة. يمكنكم إضافة مرق اللحم أو الدجاج لها حسب الرغبة
شوربة الخضار : مكونة من مجموعة من الخضار الموسمية وتحضر كطبق نباتي أو بمرق اللحم. شوربة البصل: مكونة من البصل، مرق اللحم والبهارات، تزين بالخبز المحمر والجبن السايح
شوربة خضار إيطالية: طبق نباتي من الخضار ومرق البندورة مع اضافة الأعشاب الايطاليه كالزعتر او الريحان

هناك بعض المشروبات الموسميه التي تحضر في هذا الشهر الفضيل, من  اهمها بالطبع شراب قمر الدين المحضر من رقائق المشمش المجفف, فهو يعطي طاقةوإنعاش للصائمين بالاضافه الى حلاوة مذاقه 
 شراب اللبن الرايب و يسمى في بعض المناطق بشراب العيران  او الشنينيه.   يحضر من اللبن الزبادي بأضافة الماء البارد و الملح. البعض يضيف له سن ثوم و لكن حسب الرغبه
شراب الخروب  يحضر من نبات الخروب بأضافة السكر له
شراب عرق السوس و هو من المشروبات البارده المنعشه و التقليديه في الشهر الفضيل
شراب التمر هندي: و يحضر من نبات التمر الهندي الجاف عن طريق نقعه بالماء ل ١٢ ساعه على الاقل و يتم تحليته بالسكر
هناك العديد من السلطات التي تحتوي على تشكيله من الخضار الطازجه الموسميه و اطباق مقبلات عديده فاتحه للشهيه و ايضا مغذيه.
 فتوش: هي سلطة من الخضار الطازجة ، البندورة، الخيار,والخبز المحمص أو المقلي. أنا أضيف لها الزيتون الأخضر الخالي من النوى لإضافة طعم لذيذ للسلطة.
تبوله: و هي من السلطات الطازجه المحببه للعديد من الناس و هي خفيفه  على المعده , طازجه و سهلة التحضير 
سلطة الراهب : احدى الطرق لاستعمال الباذنجان  المشوي بطريقه لذيذه
 سلطة الملفوف سلطه مشبعه و باستعمال خل البلساميك يضيف لها الكثير من الطعم الطيب
حمص  من المقبلات الطيبة الطعم و المحببه للجميع 
فتة حمص من ألأكلات الشعبيه المعروفه في بلاد الشام و السهلة التحضير, مشبعه و مغذيه
فتة دجاج من الاطباق السهلة الهضم و طعمة المذاق
متبل باذنجان: استعمال آخر للباذنجان المشوي بطريقه سهله و لذيده
سلطة المعكرونه بالخضار سلطه تحتوي كل المكونات الغدائيه من نشويات و خضار غنيه بالفيتامينات 
و المعادن و مذاقها لذيذ
ايضا يكثر اكل البورك او المعجنات في رمضان كمقبلات مع الشوربه و هناك العديد من وصفاتها  في كل بلد عربي و اسلامي, لكن كلها طيبه المذاق.

في شهر رمضان يكثر تحضير و اكل الحلويات و يعتبر القطايف ملك حلويات رمضان
القطايف: حلوى معروفه في أغلب بلاد الشرق الأوسط. العجينة تحشى بالجبنه الخاليه من الملح -جبنه حلوه- او تحشى بالقشطة ، المكسرات، المهلبيه أو حتى التفاح. تقدم مقلية أو مشوية وتغمر بالقطر- الشيره. يحضرالقطايف بأنواعه مثل القطايف العاديه الحجم اوذات الحجم الصغير التي تعرف بالقطايف العصافيري

من حلويات رمضان التقليديه: عوامه أو لقمة القاضي: عجينة مقليه على شكل دوائر وتغمر بالقطر - الشيرة.
كنافه: من الحلويات السهلة التحضير في البيت وألذها. تحشى بالمكسرات أو الجبن وتقدم ساخنة بعد صب القطر عليها.
عيش السرايا: مكون من الخبز التوست المحمر والمغمور بالقطر ثم يزين بالقشطة والفستق الحلبي 
بسبوسه أو نمورة أو هريسة : هي مكونة من السميد ، اللبن الزبادي ، السكر، الزبدة، تخلط معاً وتخبز ثم يضاف إليها القطر وتقدم باردة أو في حرارة الغرفة .
البقلاوة: من الحلويات التي تقدم في جميع المناسبات و سهلة التحضير في البيت اذا وجدت جميع مكوناتها وهي عجينة الرقاقات ، الزبدة، الحشوة حسب الذوق الشخصي يكون من المكسرات أو الجبن أو القشطة.
ايضا المشبك, الوربات, و حلويات اخرى كالبرمه و العثمليه المحشيه بالقشده و غيرها.
القطر او الشيرة : وهو العامل المشترك في تحضير الحلويات الشرق أوسطيه ويتكون من السكر ، الماء وقليل من عصير الليمون الحامض
يجب ان لا ننسى ان وجبة السحور مهمه و تناول الاكل خلالها يعطي طاقه و حيويه تساعد على الصيام لساعات طويله. ألاهتمام بوجبه خفيفه و مغذيه  هو المفضل مثل شراب اللبن او الحليب مع حبات التمر من افضل هده الوجبات. للسحور ايضا او في السهره يقدم الخشاف: مكون من المكسرات والفواكه المجففة مع خلط الجميع مع عصير المشمش أو كما يعرف بإسم قمر الدين. و يعتبر الخشاف وجبه كامله و مشبعه خصوصا عند تناولها كوجبة سحور

In few days the holy month of Ramadan will arrive. The 
Muslim world will celebrate it in every way possible. food is a big part of Ramadan, and each country has its own traditions and customs. This year Ramadan falls at the start of the summer. It will start around June 18th and ends probably around July 18th.Pasta Salad: A mix of your favorite pasta with seasonal vegetables, dressed with lemon juice, red vinegar and olive oil. Nutritious and delicious.  
As I have been doing for the past few years during Ramadan, I post a list of all my past recipes on one post to make it easier for you, my readers, to find all the recipes in one place. Most of the recipes are every day recipes that are also cooked during the month of Ramadan. Best wishes from my family to yours, may your Ramadan be blessed, full of forgiveness , mercy and joy. 
Although its going to be too warm this month, but soup is still served first on Ramadan table. Most of the recipes here are for vegetarian soups but you may always use chicken or meat broth, it is all up to you. Here is a list of soups:
Lentil Soup: Is a vegetarian soup that is made from split lentils, the orange colored ones. You may add a variety of vegetables and spices to this soup to make it your own.

Tomato soup: A vegetarian soup consists of tomato paste, water and vermicelli pasta. Plain simple and easy to prepare but very delicious. 
Vegetable soup : Using seasonal vegetables is always continent and simple. this soup is nutritious and very delicious.
Shrimp and Artichoke Soup.
Onion Soup: A classic French onion soup that is hearty and easy to prepare. 
Minestrone Soup :Vegetable soup with Italian flavors, makes a wonderful meal.
Brown Lentil Soup: A simple vegetarian soup that is full of flavor.
Roasted Carrot Soup: Easy to cook. You may use other Roasted vegetables instead of the carrots to make your own soup.
Chicken Soup. 
Ramadan table should have any form of Salad on it. Also many appetizers are prepared for variety too. here is a list of salads and appetizers:
Fattoush: A salad prepared with greens, tomatoes, cucumbers and toasted or fried pita 
chips. I personally like to add pitted green olives to it to add to its tangy taste.
Greek Salad
Cabbage Salad: This is a filling salad. The usage of Balsamic vinegar compliments the cabbage in a nice way.
Fattet Hummus:  A popular dish in Ramadan that is prepared mainly in the Levant. This dish could be prepared with many ingredients including yogurt, meats and chicken and then topped off with fried nuts. Great flavors all in one dish. 
Chicken Fatteh:  Could be a meal by itself and very easy to digest.
Baba Ghannoug, Mutabbal:  Another popular appetizer using roasted eggplants. 
Kibbeh, Kubbeh: This dish is time consuming to prepare but worth it. 
Traditionally, many Pastries are served  such as spinach pies next to soups. There are many variations  to preparing these pastries that are filled with meat or vegetables, fried or baked, depending on the origin of the recipes.
Maqloobeh, With meat and eggplants
During the holy month or Ramadan people enjoy a list of specialty drinks that are prepared in many homes throughout the Middle East.  Many of these drinks  are prepared only in Ramadan. Although water should be the number one drink in Ramadan, but these drinks are tasty, here is a list:
Amar al Deen Drink ( Apricot Drink) is considered the number one drink associated with Ramadan, at least in the Levant. It is prepared from dry cooked Apricot sheets. It gives energy with its fresh sweet taste.
Yogurt Drink Known as Shineenah or Eeran. Prepared from yogurt , water and salt. Sometimes, garlic is added to it, depending on the personal taste. 
Kharroob Drink: Is prepared from Carob tree, by cooking the dry pods with sugar and then soaking the mix in water for many hours, drained, added sugar and then served chilled. 
Liquorish Drink:  Refreshing and delicious drink during the holy month.
Tamarind Drink: Prepared from Tamarind dry pods by soaking them in water for at least 12 hours then adding sugar to it after it is strained.  

During the month of Ramadan people tend to eat more desserts than usual. Beside the usual sweets that are available or made on a regular basis, there are many desserts that are prepared ONLY in Ramadan. Qatayief is considered the king of sweets in Ramadan and associated with this holy month. The pancake like dough is filled with all kinds of goodies including cheese nuts, pudding, creams , even with apples. The Qatayief is served hot, fried or baked after its drenched with sugar syrup. There are couple of sizes for these pancakes, regular size and small size that is knows as Asafeeri Qatayief that is filled with cream and pistachios and eaten without baking the dough, but it will be already cooked on a pan.

Awwameh, or Sweet Delight, Is doughnut like dough that is formed into little balls , fried and drenched with sugar syrup.  Kunafeh:    Easy to prepare dessert at home, filled with cheese, cream or nuts. baked to perfection and served hot. Bread Cream Sweet(Aysh El Saraya): Toast bread with cream and pistachios.  Basbooseh: Semolina cake  with butter and sugar. easy to prepare and delicious. 
Baklava: Widely available dessert at sweet stores throughout the Middle East but can be prepared at home if all the ingredients are available.
Mushabbak,and Osmallyya, with many more desserts are also prepared during Ramadan. 
Sugar Syrup: Is used in almost all Middle Eastern Sweets, which gives it the shine and the sweet taste.   
During Ramadan, one should not ignore a major meal which is Suhoor mealThis meal provides the nutritious that are needed to endure the hunger and thirst throughout the day of fasting. A preferred Suhoor meal should be light and nutritious. Milk or yogurt accompanied with dates is a good suggestion for a Suhoor meal. One dish that is eaten at Suhoor time is Khuhshaf , which is a mix of dry fruits and nuts all soaked in apricot drink.
