Wheat pasta with tomatoes , fresh mozzarella cheese and fresh basil:
I had this dish at a small Italian place when I was in Rome two summers ago. The restaurant was old and very small in an ally, but it had a great menu. This dish was very delicious and very well prepared. The simplicity and freshness of the ingredients made this dish so good. I replicated the recipe when I came back home and it turned out very close to the one I had in Rome, here it is:
Ingredients:
*8 oz Whole Wheat Penne Pasta
*4 Fresh Roma Tomatoes- Boiled and peeled
*4 Fresh Roma Tomatoes- Boiled and peeled
*A handful of fresh Basil *2-3 oz. Fresh baby Mozzarella cheese
*2-3 Tablespoons Olive Oil
*Salt to taste

Direction:
-Boil the pasta and drain
-Make cross slits in the bottoms of the tomatoes. They peel easier this way.
-Boil water. Drop the tomatoes in it and let stand for few minutes. Take the tomatoes out and peel them- cut in halves and add to the warm pasta
-If you wish, you may cut the Mozzarella balls into halves or leave them whole
-Add about 2-3 three tablespoons of Olive Oil
-Add salt to your taste
-Sprinkle the Basil leaves on top of the dish

-Mix all the ingredients in a bowl
-Serve warm
